If you want a crunchy and delicious snack, try these Carnivore Fried Chicken Strips with Pork Cracklings. These strips have a thick and crispy coating made from pork cracklings, which are a mix of pork skin and fat.

Remember after dipping the chicken strips in egg and pork crackling powder, press more pork crackling powder onto each strip to make the coating even thicker.

Pork rinds can also work, but they don't make as thick of a breading layer as pork cracklings. The following ingredients and instructions are all you need to make these strips and enjoy.

Ingredients

  • 450 g chicken thighs
  • 6 oz pork cracklings
  • 2 eggs
  • 1 tbsp salt

Instructions

  1. Blend the pork cracklings and place them in a medium bowl.
  2. Cut the chicken thighs into strips about 4 inches long and 1 inch wide.
  3. Beat the eggs in a small bowl.
  4. Dip each chicken strip into the pork crackling powder, then the beaten eggs, and again into the pork crackling powder. Make sure each strip is fully coated with a thick layer of the powder.
  5. Place the coated chicken strips on a parchment paper-lined baking sheet.
  6. Sprinkle salt over the chicken strips.
  7. Bake at 400°F (200°C) for 20 minutes, flip, then bake for another 20-25 minutes until the coating is hard and crunchy.
  8. Enjoy and you can store any leftovers in an airtight container in the fridge for 2-3 days.
